Low Carb Chocolate Protein “Brownie” Cake

I was searching for a low-carb high-protein chocolate treat that could easily be fit into any meal plan, and allow clients to satisfy their evening sweet tooth without sacrificing their progress. It took a lot of trial and error, but I finally wound up with a piece of chocolate heaven that made all of the other failed attempts worth it. These are SERIOUSLY delicious. They have a light and fluffy texture like cake, but the rich chocolatey flavor of a brownie. I couldn’t decide which to call it, so I decided on both! Either way, chocolate Quest Bars step aside, you’ve met your match!

 

Recipe

2 scoops chocolate protein powder (I used the Beyond Yourself brand)
1/2 cup coconut flour
2 tbsp unsweetened cocoa powder
3 tbsp stevia or calorie free sweetener of choice
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla (real or artificial)
1/2 cup no fat plain greek yogurt
2 whole eggs
1/2 cup egg whites
50 grams low fat cream cheese
1 sugar free chocolate pudding snack pack

 

Preheat oven to 350 degrees. In a blender, combine cream cheese, eggs, and egg whites. Blend until fully combined. In a mixing bowl, combine remaining ingredients. Add cream cheese and egg mixture, stir all ingredients together. Spray an 8×8″baking dish with no-stick spray and pour batter into the dish,  ensuring that it is level and even. Bake for 30 mins or until a knife comes clean when inserted into the center.

Recipe = 9 brownies.

Macros per brownie: 11.5 g protein, 3.9 g carbs,  3.6 g fat,  2.7 g fibre
